Kale and spinach soup

Oh so yummy easy as soup

Short post again ;-). It will take you just about 1 minute longer to cook this soup than the time it takes you to read this recipe post –  that´s how short they both are ;-). Ingredients; 150 gr kale 100 gr spinach 500 ml vegetable stock half a lemon 2 cm approx fresh ginger root 1 onion coconut oil pepper Sautée the onion and the garlic in the coconut oil in a pot on medium heat. Add the kale and spinach and allow them to sautée along for a little while. Stir in the stock, the ginger and the lemon juice. Use a mixer to get the soup in  smoother state, spice with the pepper and serve! Enjoy!

Chia Pudding

Chiapudding – yummy recipe

I have to admit that the first time I had a go at making the now oh-so-trendy Chia Pudding for the first time, the result was the same as that initial sip of shampoo you get down your throat as a kid when you don´t listen to your mum asking you to keep your eyes and mouth closed as she is washing your hair (aged 3 or so 😉 🙂 ). Totally not yum, or anything close to it. So I stayed off making any of these the-worlds-easiest-and-fastest-plus-superhealthy breakfasts for almost a year, savouring the tasty one´s I could get in cafés in Östersund, Göteborg, Köbenhavn, Haarlem, Heemstede, Amsterdam… Then a few weeks ago this recipe landed in our shopping cart – can´t remember if it was from Dekamarkt or AH, but anyway – it´s totally yum! Not a hint of shampoo taste, just total bliss. If you´d like to try it, here it is; Ingredients; 1 can full fat coconut milk 40 gr chia seeds 2 tbspns honey or maple syrup 1 tspn vanilla extract Half a mango …

Snack bar – the healthy one ;-)

Quite often I see recipe´s in magazines and books which I then either rip out (that´s for the magazines eh 😉 ) or go ahead and buy the book immediately so that I can test them. If I deem them yummy as well as healthy I share them, always quoting the original source of course ;-). They ones I share will always be easy to make, as I am – still, and I think always will be – a real klutz in the kitchen. If it hadn´t been for me being lucky enough to find the best co op partner in the world to work with – thank you Jo Parfitt for introducing us – as well as the most fun, brutally honest and with a heart the size of the distance from here to the end of our galaxy and back, friend, Stephi from Appetite Voyage, I never would have ventured outside the world of already printed and created recipe´s.
