Muffins!

Banana, Date and Walnut Muffins, yum! I made these muffins yesterday for breakfast and filled up the freezer for the week to come. Yet, these are also great next to your coffee, as an office snack, before or after training, anytime actually. I have chosen to go all plantbased, but that does not mean you have to. If you go for the not plant based version just remove the plantbased milk and chia-eggs from the ingredient list below and use 3 eggs. My choice to go entirely plant based is health, animal welfare and environmentally related, all in equal portions. Ingredients: 2 cups of almond flour 2 tsp baking soda Pinch of sea salt 1 tbspn cinnamon 1 cup of dates, pitted and chopped 3 ripe bananas 3 chia-eggs ( 3 tbspns chiaseed +7,5 tbspns water ) 1 dl plant based milk of your choice. Breakfast ginger banana smoothie

Some days all you want to do is have a very quick breakfast and quite often for me that is when a smoothie or a chia pudding comes in to play. This smoothie is not just filling and yummy, you can also make extra and have it as one of your snacks later during the day. And it is the perfect post training snack as well. Just throw all of this in the blender; 2 bananas 1,5 dl water 1 tspn cinnamon fresh ginger, as much or as little as you´d like 200 gr strawberries (or any other berries ;-), it is strawberry season here right now, so….) 1,5 dl oat, soya or almond milk 2 tspns soy or rice protein powder   Swish! Enjoy!  

Kale and spinach soup

Oh so yummy easy as soup

Short post again ;-). It will take you just about 1 minute longer to cook this soup than the time it takes you to read this recipe post –  that´s how short they both are ;-). Ingredients; 150 gr kale 100 gr spinach 500 ml vegetable stock half a lemon 2 cm approx fresh ginger root 1 onion coconut oil pepper Sautée the onion and the garlic in the coconut oil in a pot on medium heat. Add the kale and spinach and allow them to sautée along for a little while. Stir in the stock, the ginger and the lemon juice. Use a mixer to get the soup in  smoother state, spice with the pepper and serve! Enjoy!

Quick, easy, yummy healthy breakfast / snack

Sometimes we just need to get some “grubb” like we call it in Sweden in really fast. This is one of my favourite Yummy, Fun and Healthy breakfasts and snacks. There are even times when I am guilty of having a double portion of this for lunch as well, when time feels really scarce. What you do is basically to mix this together; 200 or 250 grams of cottage cheese handful of nuts pinch of cinnamon huge serving of your favourite berries or fruit, or whatever berries or fruit you have in your house 😉 Enjoy!

Waffles!

Waffles to me is one of the most Swedish dishes ever. Waffles instantly make me think of my grandmother´s kitchen, cold winter days in the snow  with friends and once we were cold to the bone after hours of pulka rides and snowball fights, arriving at grandma´s for freshly made waffles with jam and whipped cream. Waffles takes me back to days on the ski slopes in Sälen , stopping by the “Våffelstuga” – literally translated “the waffle hut” – to fill up with energy through , you guessed it , waffles , whipped cream and jam. Since then I found out –  8 years ago –  that I am allergic to gluten, plus I have cut out sugar entirely of my diet and dairy products rarely enter our household. Super healthy, yummy crackers in no time

Being allergic to gluten means it is not that easy to just grab something when it´s snack time. Which might feel sligth annoying at times , yet is is a true blessing for your health as you get in to using more and more pure foods – cooking and creating from scratch. I found the base of this recipe in one of those free magazines you get at your supermarket, some months ago. As usual I did not have all the ingredients in the house as I got to test this recipe yesterday , but I did have quite some things I could supplement with. Imagine my surprise when these were not just super easy and mega fast to make, but actually tasted divine :-). Go ahead and try  for yourself!
